The secret behind this tender rib was that the chef braised the rib in the less concentrated BBQ sauce till the meat was soft. Then finished off on the super hot grill by brushing on the sauce to form the sweet crust. .

Some said this was better than Naughty Nuris at Bali but I bet the different. The rib did managed to come off from the bone clean but the meat was slightly overcooked. Lack of the "char" (caramelized bits) but also maybe I was the first customer (the grill had not woke up). .
