Suffused with smokiness, the grains of rice are more al-dente and distinctively separate than usual, which is just how I like my fried rice. Wok-fried and tossed with pieces of chicken, frozen peas, carrot and corn, this was also slightly spicy and definitely satisfying, especially with an add-on fried egg.

Saucy, spicy and indelibly umami, the wok-fired stir fry was redolent with heat from chilli padi and the fragrance of Thai holy basil. Coupled with the crunch of finely diced long beans and chunks of onion, this version of "kra pow" is amongst my favourite so far.

Drunken Noodles ($6.20)
This would make perfect drunk food - chewy, umami-laden noodles wok-tossed with tender pork belly slices, kailan, long beans, carrot and heaps of chilli padi for a painfully good amount of heat sure to wake anyone's tastebuds. A real throwback to Bangkok for me and addictive eating till the last strand has been slurped.

There's an intangible flavour profile here, a balanced melange of sweet, sour, spicy and salty - hallmarks of Thai cuisine - that transports you to 3am late night streetside suppers in one of Bangkok's infamous nightlife numbered Sois. The noodles are the perfect slippery smooth texture, each strand coated in a glistening tamarind and fish sauce mixture, interlaced with streak bits of egg, crunchy bean sprouts and spring onion. Thai me up because I'm never leaving.
