3 munchies: While the noodles were springy and cooked to almost perfection, the tonkotsu broth was not rich and creamy enough for my liking.
5 munchies: I'm still thinking about this absolutely delish tsukemen that comes with two slices of fatty chashu and a bowl of Bonito pork soup. One look at the ajitsuke tamago (soy sauce-marinated egg; add-on item) and you know it was a good egg from the semi-runny centre and slightly firm edges.
The piping hot, savoury dipping broth was the star element of the dish. It was packed with flavour from the pork and Bonito powder, as well as cabbage, onions, scallions, and bamboo shoot. I'd advise not to drink it on its own nor pour the thick, springy noodles into the soup as the saltiness could change the texture of the noodles and ruin your entire dish. After finish eating the tsukemen, do ask for the regular ramen broth so you can continue savouring the flavourful soup – perfect for the 16° C weather outside in the evening!
Strangely enough, however, the Tonkotsu Ramen that I had in 2014 had nothing to shout about. So glad that I decided to give this one-Michelin-starred ramen restaurant, which wasn't on my itinerary, another go.
