This green tea & pistachio sponge made the base for this watermelon yoghurt and sour strawberry mousse centred meringue sweet treat. Pleasing to the eyes and the palate. The tartness of the watermelon and strawberry mousse was slightly more overpowering than the sponge base so - might come across a little too sweet for some (especially with all that meringue). But otherwise, a nice one to have with coffee and to share!
My personal fave from the entire selection of cakes we stuffed ourselves: layered with watermelon yoghurt mousse, sour strawberry mousse, green tea sponge, torched meringue and flecks of freeze dried strawberries.

One of the best cake shops in Melbourne. Still love the dark chocolate raspberry cake. YUM!
