Love this fuss free, hole in the wall kind of place serving up authentic pho with wholesome tasting soup. They're very generous with the pho and the tender beef slices are abundant too ($11.90) plus the mixed spring roll is highlight recommended. Prefer the crispy ones, but the minty rice roll ones are extremely refreshing too.
Stew beef with tapioca noodles ($8.90). This place wins with it's fresh al fresco dining (windy breeze along the canal) especially at night. It's a no frills Viet place serving a wide variety, and you can expect to get your orders in <5 mins. This bowl was slightly spicier than I expected. Currently in a stew beef noodle phase having had this twice in two days.

Had to try their pho with their snaking long queues, and i got the combination bowl for $13 with its tender angus beef, flank, tendons. Generous serving with hearty soup! A treat as the price is definitely on the higher end for a foodcourt
Found at the Marina Bay link mall and for $3.20, this meets the peckish needs just fine. I got the pork floss and egg one with the fish sauce, and it was satisfying (less those sneaky corianders....)
