Traditionally, the crispy duck skin is wrapped in thin popiah like skin with cucumber, spring onions, and a dose of thick sweet sauce. The ones here is a little different as you get to eat it with the duck meat. The best part you get to have fun wrapping it.
The mutton is fried with chilli flakes, dried chillies and Sichuan peppercorn.The chilies not only add color but heat to the dish while the peppercorn produces a tingly and numbing sensation in your mouth. The mutton is very tender, fall of the bone tender, and extremely flavourful. Very spicy and intestine-burning but also very shiok!
The prawn is very 进味 (Jing Wei). The sauce that is on the thicker side is sweet and savoury which goes well with the fresh prawns. Bite into the shell of the prawns and you will be grated with a burst of flavours.
