One bite was all it took to confirm the obvious succulence and bouncy-flesh yumminess of this lobster. Not that it should surprise as minutes prior, this creature was blowing bubbles with its buddies in the glass tank across my table.
As eager as I was to indulge in its bare naked sweetness, the accompanying garlic butter oil was such a sneaky temptress I had no choice but to succumb.

Besides the fantastic value of the $45++ set lunch, Spago also offers an a la carte lunch menu that will have you wishing you had a bigger stomach and the entire afternoon off.
This Black Cod came highly recommended by our favourite server Catalin. Hence, it was imperative we ordered it.
The excellent quality of the cod fish was a given since this is Spago. Marinated in Japanese sake, honey and miso, the flesh came away in chunky, buttery-smooth flakes which practically melted in the mouth.
What really got us ooh-ing and aah-ing were the egg noodles. Like that mousy girl in a chorus who triggers a collective jaw-drop when she suddenly belts out a song all Aretha Franklinesque, the fine strands were astonishing. They exuded a refreshing citrus note from orange zest that complemented the sweetness of the cod wonderfully.
We also loved the silkiness layered on by the quail egg, and how the julienned cucumber, coriander and leek brought crispness and a fragrant spark to the dish.
Oh and by the way, this was a hefty portion. The huge plate just makes it look small 😆

A taste is but a tease of how immensely gratifying it would be to have the full-sized serving of this handmade tortellini all to myself.

This salad at South Union Park has a nice Asian twist to it. In terms of flavour, there are no sharp edges; only a refined, balanced medley that comes from the rather crispy pieces of duck meat being tossed with a carrot and radish slaw, and peanuts, in a light plum vinaigrette.
I recommend sharing this as a starter if you're with a couple of friends. It's suitable as a main course on its own too if you want something light.

Here is the second dish of the spanking new Brine's 4-course lunch tasting menu.
Although described as Tenderloin Tartare, the halal beef (yes, Chef @christophetan uses halal meats) was actually lightly torched so there's a pleasant smokiness to the small cubes of tenderloin. Dressed in wasabi mayo for a creamy mouthfeel, and served with crispy lotus root and thin slices of toast, this was a deftly orchestrated creation of textures and flavours.
Now is a good time to visit this restaurant located inside Hotel Clover as they have a 40% discount promotion on their soft launch menu (ends 23rd April 2017).

We reacted to this beautifully plated dessert by Pastry Chef @ailiong88 the way any sane human being would - with exclamations of praise and plenty of camera action. And then we realised the best part of it was not actually visible.
Precisely crafted, the taste was what truly ruled. And clearly, the whole was greater than the sum of the parts because as delightful as each element was, their coming together in each mouthful showcased the dessert in the best light.
Allow me break it down for you.
Essentially this is Spago's interpretation of a calamansi vacherin. So there was zingy sorbet, domes of vanilla ice-cream on crunchy cookie base, almond crumble, blueberries and pristine crisp meringue.
What more can I say except that every meal I've had at Spago has unerrringly ended on a high note.
