This was a beautiful dish with homemade XO sauce, sunchoke and squid ink puree, radicchio and crunchy garlic... Hiding under the radicchio leaf we're two big pieces of octopus!
... and that rose was made from sweet and earthy beetroot with creamy burrata cheese with tobiko!
