If you’re wondering, this is from Dragon Tree Katong Laksa in Bugis. I guess nowadays the word “Katong” doesn’t have any value for laksa anymore. 😂
Combining Hamaguri clams, pork bone and Japanese dashi broth, Chef Atsushi’s Hamaguri Soup Ramen is umami-packed with an intense depth of flavor. I also love how the truffle paste brings a subtle aroma that makes this bowl of ramen even more delectable.
Oh, and that spoonful of sweet Hamaguri clam with flavored rice - what a great way to tease your palate before they serve the masterpiece.
Served with a glorious stack of addictive fried chicken, the slightly charred buttermilk pancakes have the right crisp on the edges, and light and fluffy in the center. I like how the chili flakes (YES CHILI) in the maple sauce added a tinge of spiciness, bringing balance to the sweet-savoury dish. Now excuse me while I slip into a food coma.
Hands down the best bagel in Singapore. ✨
