Well, well, well. What do you know... Spain and Japan form a pretty impressive alliance when it comes to gastronomy. Never could I foretell when delectable tapas (courtesy of ex-celebrity restaurant Santi chef Pepe) meets superb sakes, an exquisite frisson can spark. This place was packed to the gills when I was there. And rightly so. Especially when the standard 10% service charge is waived.
Only served during lunch this is one hae bee hoon or mee you may not want to miss. Fresh tasty prawns with a big slice of pork done Japanese style and the star is the soup. Not a taste of MSG it's pure prawn soup. Pricy yes but worth it.
Burnt Ends is famous for their pulled pork burger and sharing plates, but they do steaks equally well. The Onglet ($26/100g) is a very well executed piece of charcoal-grilled hanger steak – charred to perfection, wonderfully tender and packs a punch of flavour along with the accompanying beef jus. The Rump Cap is excellent as well: cooked flawlessly and served with burnt onion sauce and and bone marrow. Also great is the Mayura Cube Roll ($60/100g), that as Tastemaker Veronica Phua puts it, is "buttery to the nth degree" and "expertly grilled with nothing but a sprinkle of sea salt – the epitome of a perfect steak".

When perusing French eateries, don’t overlook Singapore's fine dining stalwart, Les Amis, set in the heart of Orchard Road. Yes, imported chefs – like Gunther Hubrechsen and Armin Leitgeb – have come and gone but Les Amis has yet another trump. Former Joel Robuchon Hong Kong executive chef, Sebastian Lepinoy, who presided over the now defunct Cepage - which closed in June 2013 - now call the shots with a triumvirate of tasting menus: decouverte (S$150++ for 5 courses), epicurien (S$205++ for 6 courses) and degustation (S$280++ for 7 courses). We suggest you skip lunch to savour Lepinoy's Japanese accented French extravaganza via the degustation, which may feature L'Amadai (Amadai fish with scales served in an aromatic saffron-scented bouillabaisse with squid and sauteed lobster) and Le Mikan (confit of candied whole mikan stuffed with mikan panna cotta and sorbet on a light earl grey jelly.)
In this new urban/edgy/bare brick Tras St spot, having Italian for dinner has gotten a lot more fun. Don't miss the Pulled Pork & Waffle fries ($15), perfectly fluffy homemade Gnocchi ($21), and the (omg wait for it) - Triple Cheese & Truffle Toasty at $15. Finish with a gorgeous Cannoli with whipped ricotta and lemon.
This humble little coffeeshop in Tiong Bahru has only ever sold mee pok, kopi and toast for the past 70 years. By night, this neighborhood favorite transforms into a brand new yakitori and steamboat bar, Bincho. Go for either the $50 or $80 yakitori omakase menus, and enjoy a cocktail or two. If a unique setting and experience is what you're looking for, this might just be it.
This gorgeous shophouse gives you the option of sitting at the counter to watch the wonders of an open kitchen, or the beautifully lit basement communal table. Order a bottle of wine, and start with the mind-blowing Sea Urchin & Squid Ink pudding. As Burppler Jibs puts it perfectly, 'I can only tell you to try for yourself to know what it means to be lost for words at a dish like this.' Be adventurous and go for the Beef Tripe, it is unbelievably tasty and crispy on the edges. Finish off with the light-as-air doughnuts, and you're in for a great night.
