However much I rave about a pastry at a certain cafe, I still think it's nice when it gets a stamp of approval from the people whose country the pastry originates from. This was what happened when I took a French gentleman to try the lemon tart at Artisan Boulangerie & Co. Alexis, a true born-and-bred Parisian, was suitably impressed with their version. He loved the zestiness and texture of the filling, and had nothing but praise for the tart base too.
They use flour from Japan and natural egg aeration without any artificial stabilisers to achieve the soft and moist texture.
Next in line, Yuzu - Elderflower white chocolate mousse and yuzu sabayon, lastly Kokoro - Caramel mousse, chocolate mousse and coffee liquid.
