Stripped to its core, the great kinda 'eggs royale' is really a smoked salmon slice atop an English muffin with a wonderfully poached (read: firm egg white, runny yolk) egg crowning it in all its glory. Nesting right beneath (or above) it is a layer of thick, gooey hollandaise sauce. Nothing can be said about the smoked salmon for this one. It tastes just like all other smoked salmon I've had before. The muffin wasn't dry, which was good for me, even though it was slightly crisped in the outside. The egg my partner had was slightly undercooked (read: whites were still semi-transclusent). Mine was fine, though the yolk wasn't exactly runny the way I'd like it. Couldn't taste much of the hollandaise which is something I've experienced at other places also (which begs the question, is hollandaise supposedly strong and distinct in taste?) So this dish was really just like any other Eggs Royale I've had at other places. Nevertheless, there was nothing so bad about this. It was worth a try and good to know this place doesn't have awful brunch, because I really liked the other two items we ordered, hee :)
