By being the only few stalls that serve the night goers , Hai Chang Fishhead Steamboat is a crowd favourite with its charcoal cauldron of umami fish stock that contains sliced fish, fried flat fish, yam, seaweed and green vegetables. Go for the sea bream ($18/$23/$28) option with the slightly thicker chunks of fish meat that has a firmer texture than pomfret. One good thing about using charcoal is that it not only brings out the "sweetness" and natural flavours, it keeps the steamboat warm to a certain temperature without overcooking or burning the food.
