The Sanada Soba (¥1200) at Katanaya has got to be the toughest soba I've ever encountered. Renowned for its resilient texture, these handcrafted noodles are chopped fresh for each serving. Despite their toughness, they still retain a satisfying slurpiness. The Sanada style dipping sauce, infused with miso, adds a savoury kick to the dry noodles, creating a mouthwatering combination. The portion size is quite generous, although I found myself wishing for more sauce towards the end to fully indulge in the addictive flavours.
