When someone mentions tofu, what's the first thing that comes to your mind? Oh, it's probably soft, smooth, silky, easily falls apart, and wobbly. But tofu can also be firm, extra-firm, chewy, and dense. It's usually one extreme or the other, rarely something in between.

Now, let me introduce you to a different kind of tofu, Jimami Tofu (¥270). This tofu is very firm, yet also has a smooth, thick, and wobbly texture. Remember the science experiment with Oobleck? No? Oobleck is a mixture of cornstarch and water that behaves like both a solid and a liquid, depending on how much pressure you apply. Look it up on YouTube if you're curious! Jimami Tofu has a somewhat similar feel, except it doesn’t really liquify. It's not exactly a paste, but it’s also not as thick as sauce or gravy. Check out the last video for a better idea of what I’m talking about, the viscosity is so high that it flows very slowly.

It’s tough to scoop on the outside, but once it’s in your mouth, the texture is delicate, creamy, and melts in a way that makes you wonder how that’s even possible. Honestly, I had so much trouble scooping it up that I ended up just slurping it from the cup! Despite its firmness, it’s only a little chewy and slides down your throat easily.

This tofu is meticulously made from scratch with peanuts. Yes, you read that right. They are washed, milked, and then the peanut milk is heated until it starts to thicken. A flipping technique is used to create the perfect texture, and tapioca flour is added for extra chewiness and springiness. It’s paired with a special Jimami tofu sauce, made from Hokkaido wheat, soybeans, and a secret recipe. You can really taste the love and care that goes into making it. The beauty of this tofu is how versatile it is, you can pair it with sweet, salty, spicy, or umami sauces, and it will taste amazing in any combination. You’ll be tempted to experiment with different flavours and enjoy the variety. Traditionally, Jimami Tofu is served with a sweetened soy sauce, which gives it a sweet-savoury balance with a nutty flavour. Personally, I prefer the black honey version because who doesn’t love sweet?

You can visit their factory café where they serve all-you-can-eat tofu, eat till you have fear of tofu, near Oroku Monorail Station. I had planned to go but had to skip it due to bad weather. Maybe next trip, if I come back!
