It's been a while since I've felt the need to write immediately after a meal, but this was a very serendipitous find. Wildfire is perhaps more well known for their burger (siracha chicken or triple bacon, anyone?), but a little known secret is that their steaks are arguably just as good as their burgers. Lovingly chargrilled and delightfully tender, this was one thoroughly enjoyable meal; perfectly seared and rich, the secret lies in the choice of cut and attention to detail. The hanger steak is easily overcooked, but if done well, it offers the full bodied, rich beef flavor at a fraction of the cost of other more premium cuts. The sharp Languiole knife helps ensure that the juices end up in the mouth, and not the plate. Kudos to their indie/alternative playlist, and select of craft beers too.
