Along our drive from Key West to Orlando, we stopped by Skipper's Dockside. This was a most cosy place! With an outdoor tiki bar and a pool table indoors, this would have been the kind of place I envision spending late nights catching up with old friends over a couple of beers. The very commonplace calamari was actually brilliantly executed; it was immediately evident that the seafood here would only be the freshest and best quality. Superbly succulent and tender squid, sweet chilli, piquant siracha aioli; garnished with bell pepper slices, spring onions, and a slice of key lime by the side for taste. With such a masterful grasp of temperature and timing, this was remarkably crisp, without the least hint of oil at all. The party of us were fighting for more, so we decided to have a second serving 😂 simply sublime!! Calamari would never be the same again.

Not the prettiest nor freshiest of bowls, but you get what you pay for. Rarely would you get such a variety of sashimi for less than $25, including tai, kanpachi, amaebi, akagai, ikura, uni. More effort could be put into the vinegared rice, but kudos for the shiso and gari. Marketed mainly for takeaway and platters, there is actually a small area for dining-in. They have 1-for-1 promotions over the weekends too, items vary).

Bright espresso granita crystals, fork-shaved on rich, whipped marscapone with cocoa crumble layers and coffee-soaked ladyfingers, but sweetened instead with decadent dulce de leche. A traditional classic with a stellar, modern twist. Easily one of the best and most impressionable versions I have had; so good I had more than one serving.

Sweet, cool and refeshing, with a subtle medicinal taste, before slowly evolving into a piquant and herbal flavour. Delicately balanced, and a very exciting, unqiue take on the apéritif.

Look at that creamy marbling!! This photo absolutely does not do the beef any justice. 🐮🍴 Kudos to the team for a fun enjoyable dinner, not to mention those tips on grilling short ribs and leek. Special mention and thanks to chef Lawrence who came to our assistance to cook the 28 Days Dry-aged USDA Prime Sirloin. Also pretty impressed that I didn't end up smelling like grime and barbeque 🙌🏻 #burpple

Visually engaging, magically sweet, and delectably sinful with those fragrant fats.

This bistronomy concept would have been well worth pursuing, essentially fine-dining in an approachable bistro setting. Very surprised, and definitely sad to see @sorrel.sg go, a few months after head chef Johnston Teo left. This place had polarized diners at times, but I had felt that the experience was extraordinary; great quality with decent prices in a casual yet sexy environment. Their techniques were deserving and execution flawless.

Does anyone have any outstanding recommendations, especially for lunch sets?

This wildly popular éclair and parfait dessert cafe in the hip Kampong Glam area serves subtle yet sublime flavours, with clean tastes and even cleaner white minimalistic decor bathed in light. The parallel lines will definitely bring out the OCD in you. This place will be irresistable to instagrammers, but be warned that a flatlay without any shadow is virtually impossible.

The choux pastries come in a vast array of innovative flavours that seemed to be inspired by traditional Japanese flavours, from sakura, matcha, yuzu, to even ume shiso. The puffs were definitely lighter, but unfortunately felt somewhat flaccid; perhaps it had to do with the fact that I was there at closing hour. I would love to give it another chance.

On a side note, I shall always remember this as the instance which both gave rise to my hand-modelling career, and ended it at the same time. I quote, "can you please have a more consistent stream?"

And of course, not forgetting the masterfully grilled marinated saba on the bed of oyster mushrooms, paired with grated radish and crunchy brussel sprouts; wholesome flavours representing the simplicity of the earth and sea.

Most dim sum sold at hawker centres are cheap, but of poor quality and usually, an utter disappointment, but this stall is a welcome exception. Opened by a quiet couple from Xi'an (西安) to little fanfare, they would very much prefer to knead dough and wrap dumplings than chat. Not that it matters, because the food is fresh and fabulous! Take a good look at these babies; six of them can hardly fit into one bamboo basket, and it's way bigger than the condiments dish. Each dumpling has a substantial amount of minced pork, with a flavourful stock and translucent, springy skin. Simple, guilty pleasures, and a piece of heaven with each bite.

Al-dente pasta, five deshelled succulent prawns, two tender Hokkaido scallops, saffron, and luscious greens. Freshness was key here, as was the medley of seafood, but what was most impressive was the use of fragrant crustacean oil; really brought to mind images of the ocean.

Also, I must say that if I styled my food before uploading (the way some people do), there would be barely any pasta visible. There was just so much shellfish on this one plate.
