I was pleasantly surprised when I discovered that Suzette's planning to expand their repertoire past desserts and include entrees...in picnic style! That's right, Suzette is about to launch their new picnic basket menu, which consists of your choice from six exciting entrees, three desserts and your choice of cold brewed coffee, iced white coffee, and iced single origin chocolate (every head at the picnic gets to pick their poison).
Of course, due to my obsession with duck, I instantly went with the pulled duck burger without hesitation, earning me a place at the top of Donald Duck's hitlist. But damn if the duck wasn't worth it. Juicy, tender pulled duck that's been slow cooked to sublimity is sandwiched between two big, beautiful buns tangoing with a copious amount of mouthwatering mango salsa makes for a damn delicious duck burger.
The duck itself is sparingly seasoned with a secret blend of spices that would require Suzette's crew to terminate you if they told you, but it is more than enough to make the duck confit downright divine. After being slow cooked to pure protein perfection, the fowl is then pan fried to get a little bit of charming char before being piled onto the burger.
Instead of going the usual route of plonking a direct contrast to the savoriness and meatiness of the duck in the form of a berry based sauce, Suzette has (wisely) decided instead to complement and amplify the qualities of the duck with a sweet and slightly tangy mango salsa. The mango brings about a congenial complement to the duck with its sweetness, while the tomatoes add a little extra juiciness to the pleasurable proceedings going on between the buns.
I was a little intrigued to find that the duck skin, although panfried to achieve some sexy char on the meat, was as soft as the skin of a braised (lor) duck. Teresa, our host, explained to us that this was due to the fact that they intended for these picnic baskets to follow their buyers as far as Marina Barrage, and even if the skin were to be cracklingly crispy, it would be lamely limp by then. Perhaps Suzette could experiment with removing said skin, frying it till felicitously crisp and then putting it as a sidekick to the beautiful burger.
Overall, with outstanding offerings such as this duck burger, I can see Suzette's peerless picnic baskets netting quite a tidy profit. It also helps that the environs around Suzette is picnic and picture (or Instagram) perfect.
