That's one generous serving of gratinated crab in a shell, with the whole mix tasting like lobster bisque, but one that's more intense. That's the result of the seafood stock base, and a Sofrito base which was prepared with leek, onion, tomato, and cooked till caramelised, before adding brandy. The smoky texture on the top is the result of grilling this whole shell with toppings of bread crumbs and butter.
