Choose either the SGO Classic Set or SGO Selected Set (the difference is whether you want organs). We went with the Selected Set: gizzard, heart, breast soft bone, thigh, tenders, and seasonal grilled vegetables.
Is it amazing? Not really, definitely overhyped. At best, above‑average meat quality, but still enjoyable. No need to worry about grilling skills, as servers cook the meat to the right texture and guide you on pairings.
For me, I love to stick with the classics like salt or garlic sauce as they add just enough flavour while letting the natural taste shine, and I used them throughout the meal. Sriracha mayo worked well for the dull, dry tenders, adding fat and umami to this lean cut I usually avoid. Crunchy soft bone paired nicely with their sancho soy sauce. Gizzard, which I rarely eat due to its gamey taste, turned out surprisingly delicious from the grill and matched well with garlic sauce. Heart was best with salt to bring out its natural flavour. Thigh went well with any condiment, grilled to crispy skin while retaining juiciness. I also noticed they patted lemon wedge on certain cuts to add moisture, what a thoughtful touch.
The heat from the charcoal wasn’t very strong, but it cooked steadily. It may be slower, yet that made it easier to control the doneness while the server rotated between tables to help grill for everyone, much appreciated. I also liked the suction from the grill; it was strong enough that you leave the place without any lingering smell.
