The name sounds somewhat pretentious and I was a little worried to find the restaurant rather empty at 2pm. Thankfully it delivered on taste. I had the Signature Trio Ramen which included 2 large prawns, prawn dumplings and prawn paste with ebiko. Noodles were of the right firmness, but the winner was the broth. Almost bisque-like, it had extracted the maximum sweetness and umami from the prawns and was full-bodied.
