These are actually piquillo peppers stuffed with atlantic cod fish and served with its own piquillo emulsion. Within the thin shell of the peppers were meaty salted Atlantic cod cooked with onions and garlic. This dish exemplifies the cuisine to be expected here, where there were complex mix of flavours, but all in harmony.
