Honestly, I wouldn’t mind eating Mixed Vege Rice everyday as you can very well mix & match all the different dishes that the chefs whip up (probably some rotation too!) It is also the best way to up my veggie intake for the day! 💚💚💚 The only cons - being spoilt for choice & stressed up when it is finally my turn to choose the dishes! 😅

As I was going vegetarian, here is what I chose:

🔹️Stir-fried kangkong: although my favourite version is still having it spicy (sambal belacan kangkong), this 清炒 version works for me as well. 😍😍😍 Just the fragrance of garlic, onions & simple seasoning is enough to bring out the natural sweetness of the vegetables! 👍🏻 Especially love the crunch!

🔹️Stir-fried egg with onions: Friends who know me well will know that I’m not a fan of onions. However, omelette with onions seem to be something that is completely acceptable to me! 👌🏻 When cooked, these pungent onions become incredible sweet & impart this natural sweetness & its aroma to the eggs. A fragrant dish for sure! 😋

🔹️Beancurd skin: More affectionately known as Tau Kee, I love these especially when eating porridge as they act as perfect sponges, absorbing all the essence of the gravy that they were braised in. 🤤🤤🤤 These were thankfully pretty soft & of a good chew, & glad that they went easy on sodium, so the amount of rice was just nice to accompany my dishes with. 👍🏻
