This is Salmon Ochazuke. A very modern interpretation of a classic Japanese dish. Steamed white rice with seared Norwegian salmon, edamame and salmon caviar. Poured over with smoked tea dashi. The caviar was fresh with none of that fishyness. The mini explosion after popping in the mouth was wonderfully delightful. Adding edamame created a crunchy texture to the whole dish. But before I plunged into my lunch... I was just pleasantly surprised that I was asked to taste the tea dashi in a teeny tea cup before the server poured over my rice. She will then asked if it was too salty. If it was, she will then pour just abit so as not to overpower the dish.
