Each piece of work which comes out from the kitchen is no doubt a revelation of this chef’s quirky persona. Designed to resemble our local delights, this egg is but one part of the four course meal we had. Tap open the shell, pieced together by sugar, to reveal runny egg white and yolk of mango sticky rice inspiration. Shake some ‘pepper’ and ‘soy sauce’ on it to flavour your eggs with sesame seeds and sauce. The sweet-sourish taste of the mango was a great accompaniment to runny white coconut whites.
