It's my first time here, and the queue was long. As I approached the stall, I could see how meticulously each bowl of noodle was prepared: noodle was cooked to springy perfection and mixed consistently with the sauce, 3 slices of melt-in-the-mouth charshiu was added, with wanton and fried prawn in crispy noodle followed. It was garnished with chopped scallions and chilli.
The taste was great at first bite; but as I savoured the sumptuous ingredients, I found that the taste was one dimensional: different shades of saltiness. Hence, may I humbly suggest to tweak the taste, whether to introduce scallions with more bite, making use of sweetness or vinaigrette sourness. The noodle needs some unexpected element to accentuate the taste, to create that oomph factor.
Nonetheless, please keep up the good work. Need one more tweak to be elevated to the next level!!
