I came for pizza and I came for buffalo mozzarella. The trip to one end of Singapore was worth it. The wood-fired oven obviously helped, producing one of the most magical crusts I've eaten. I always say the centerpiece of pizza is the crust, not the ingredients. If you're not experiencing that, pizza is the wrong thing you're eating. This was my first time trying buffalo mozzarella, which is similar to burrata, an orb that breaks into softer cheese inside. You also can't find it everywhere because it has to be specially imported. That's a quirk about authentic Italian produce. They're so proud of their heritage they certify particular foods to be exported from particular regions.
