The Penang’s version of prawn mee is different from ours as the broth is boiled with a base of prawn shells, heads and pork ribs that resulted in the red hue. When ordered, the stall assistant will blanch the yellow noodles, rice vermicelli and kangkong before adding sliced pork, de-shelled prawns, fish cake, a heap of fried shallots and a spoonful of the red chilli paste. Last but not least, the umami prawn stock is added in. Give it a good mix before eating and this will be your comforting bowl of Penang prawn mee.
