The reason behind was that soba gets dry and brittle overtime, so is best to consume it fast to enjoy the chewy and grainy texture of it. For me, I find that the noodle was just alright and not smooth enough. Maybe cause I had better one before.

One dip is enough to tell you that this is an awesome sauce. In fact, the sauce is even better than the classic one. Their signature sauce really helps to kill the dull taste of the soba.
