This savory crepe ($18) consisted of a thin buckwheat pancake filled with cheese, topped with slices of smoked salmon and an egg. There were also red onions and capers sprinkled on top.
The crepe itself was cold which is strange because I expected it to be hot since crepes are supposed to be freshly made. It was still nice and chewy though and the buckwheat flavor shone through. However, mixing it up with the runny egg yolk and smoked salmon made it so much more delicious and flavorful. The richness of the egg yolk and the heavy umami of the smoked salmon complimented perfectly with the cheesy crepe. The onions added a crunch and injected a sharpness that woke up a palate which was otherwise inundated with oil and fat.
This dish is good not because of its execution, but because of how well all the flavors worked. :)
