Very similar to our local dish Mee hoon kway but their noodle is thicker and very Q, made from wheat flour. Soup is traditionally miso based broth with pumpkin and other seasonal vegetables. The soup is so sweet and made the noodle milky and it abosrb the broth well. This is by far my most favourite meal in Japan. Reminds me of Jeju, Korea’s handmade Wheat noodle but Hoto soup is better!! the tempura here is so good too 😭😭👍🏻 ________________________________________________________
