Upper Cross Street has two soy sauce chicken shops not far from each other with homophonous names. I tried one years ago and never knew there's another until recently. I don't have their story so go elsewhere for that. I'll start off by saying Chiew Kee set a high benchmark. Chew Kee here was competent but wasn't without flaws. The chicken was the best thing, rightly so. Good soy sauce chicken you can't split the meat from the sauce, and here it's completely marinated. Unfortunately, the meat clearly wasn't cooked perfectly. Also, the soup's lightness can be polarising. Anyway, as I sat there, I was fascinated how eight pax ran the business. They weren't spread out and none was acting busy. When an order arrived, all eight switched on like clockwork, each with a distinct role, yet symphonic. Impressive.
