Went vegetarian yesterday so it was time for some cai png again! ๐Ÿš๐Ÿš๐Ÿš Despite the no-meat quest, the extensive range of dishes at the stall still leaves me in a dilemma! Hereโ€™s what I picked out to add to my healthy brown rice! ๐Ÿ’•

๐Ÿ”น๏ธStir-fried eggplant: I guess some people might not like eggplant/brinjal ๐Ÿ† due to its soft & slimy texture but I simply love it! Be it stir-fried with sweet & dark sauce (like this one here), or with sambal chilli & dried shrimps (like my mum does at home), I love them all! โคโคโค Cuz they absorb the flavours really well! & did I mention that THAT PURPLE denotes a high level of antioxidants! ๐Ÿ˜‰

๐Ÿ”น๏ธStir-fried pumpkin: pumpkins are known to be high in dietary fibre, Vitamin A as well as antioxidants, so I cant be more right than to have them on my plate (& in my stomach)! ๐Ÿ’ฏ Not only does this heart-healthy nutrient-dense vegetable taste yummy, it keeps me really full as well so that means less snacking!โœŒ๐ŸปโœŒ๐ŸปโœŒ๐Ÿป

๐Ÿ”น๏ธStir-fried spinach: the lightest-tasting vege of them all! Well, at least that balances out the meal a bit! ๐Ÿ‘๐Ÿป As vegetables tend to absorb oils when cooked, this is my constant at cai png stalls as I can be assured that this dish will not be an oily affair. ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹
