Crowned with grated radish and a single bright orange Japanese yolk, the Signature Tsukimi Hamburg Don ($12.80) was surprisingly satisfying. The hamburg steak patty was moist, succulent and not too cloying or “meaty”. Hand-shaped with a blend of US beef, pork and Miyazaki Wagyu beef cuts; the patty was also savoury and well-marinated. Texture-wise, it was decently packed, not overly soft or dense. What’s more, the piping hot bowl of fluffy, comforting Japanese Hitomebore rice from Tohoku was yummy and the accompanying house-made bonito-kombu sauce was also rather complementary, tying everything together!
