The Crispy Silver Hill Duck served with Homemade Crepes ($68.00 / Half) was the highlight of the meal. Not really knowing what to expect, I was pleasantly surprised by how succulent the meat was. Prepared with London duck sourced from Ireland's famed Silver Hill Farm, the dish resembles a large duck confit in my opinion. Marinated then deep-fried to a crisp, before being shredded like floss to be wrapped in the crepes and the accompanying condiments; the protein was very flavourful. Although you don’t get the glistening duck skin, you do get bits of crunch from the well-fried skin and it proved to be an interesting change from the usual Beijing Duck - a lighter alternative yet just as satisfying and substantial.
