Broth was on the lighter side but had a clean porky flavour and quite a bit of umami. Noodles were thin and on the softer side. Kudos to the perfect molten egg but the MVP got to be the char siu. Though the slices were thin, it was rather tender and the fats had a really nice bite, resulting in a lot of flavour as u chew and it wasn't too greasy.
Spicy paste is usually mixed in but I can request to have it by the side. Quite unique and they won't reveal what it is, but it's some sort of miso paste with a decent kick. Mix it into the broth to completely change the taste profile and amp up the shiokness.
