What I pity that I did not get the name of this street noodle. No it's not the conventional pho bo, it has ox-tail, beef all and sliced beef brisket as the base ingredient. The noodle is the thick bee hoon (white vermicelli) which is smoother. Nothing is complete in Vietnam street food with the generous herb topping, spring onion in this case, which enhances the flavour of the already very flavourful beef stock.
