Just returned from Japan, and what a good time to review a bowl of ramen after understanding what's humanly possible. It's all about the details. They typically serve ramen in pipping hot broth, generous portions of noodles and the noodles are not over cooked or soft (unless you asked for it). I like that the broth at Menya Takeuchi is rich, collagen-ish, creamy and flavorful. I prefer their soup to be hotter, noodles less cooked and noodle servings can be bigger. Skip the special option unless you really want the extra crab(?) balls and more chicken.
