Broth is excellent and very flavourful. Even without the addition of milk, the soup is thick and cloudy. This bowl comes with fried fish which is fresh and tender. The fried fish is battered nicely, not too thick. If you can’t decide to go for fresh or fried fish, Xin Yuan Ji has got your back with the mixed fish soup that’s slightly more expensive but gets you the best of both worlds. Note that there’s a lot of sediments at the bottom of the bowl which are gritty and sandy so avoid disturbing the base while savouring the soup.

We by-passed here at 7pm and the queue is super long, so we decided to be back at 9pm and the queue is still there. Waited for around 15mins for the deep fried fish soup noodle without milk ($5.8). The soup is pretty 鮮 but was wondering whether msg is added. The soup that is added with milk is quite sweet in flavour. Not bad but probably won’t be queueing for this next time.

Xin Yuan Ji, located on Tan Quee Lan Street, is a famous fish soup option in Bugis, with waiting times stretching over 30 minutes during peak hours. The Bugis outlet opens till 11pm daily, so keep this on your late dinner rotation. They offer charcoal fish head steamboat, but what you must come for is the ubiquitous bowls of fish soup that you are likely to see on every table. It's so good, you won't want to share. Of the three versions available — sliced fish, fried fish, and fish head, Burpple Tastemaker Justin Teo's personal favourite is the Fried Fish Soup ($5.80). He explains that the fish chunks are thick, fresh and complements the sweet soup stock well. For maximum satisfaction, opt for milk in your soup and throw in some freshly cut red chillies.

My third bowl of fish soup at Xin Yuan Ji during a single seating. This is the fish head bee hoon soup, which is said to be one of their speciality.

But I didn't like this at all.. Yes, the fish head is well fried and crispy. But there's just too much skin which was really fishy, and that fishy taste gets into the soup which slightly tainted the otherwise sweet and fresh stock. The meat is tender but for a more substantial bite, I'll stick to their fried fish soup.

My favourite fried fish soup is at Cafe 2000 (M Hotel). They have a cod fish bee hoon soup on the menu and I love cod. Their fried cod remains crispy in the soup when served. Cognac is given on the side so it's optional whether you want it in your soup.

So between the sliced fish, fried fish and fish head soup here, it's clear that my favourite is the fried fish soup.

My most trusted foodie @spottypuff recommended it to me a few months back but I've only managed to try it today.

I had 3 versions of the fish soup - sliced fish, fried fish, and fish head. Didn't like the sliced fish as I didn't think it's as fresh as I wish it is, it wasn't tender enough too. For the best sliced fish, I return incessantly to the teochew fish soup at Maxwell.

This fried fish soup is pretty good though! The stock is sweet and the fried fish chunks are thick and yummy. This bowl reminds me of Jin Hua at Maxwell, which is of a very similar style.

$5.80 per bowl. Wanted mixed fish but it was $8.30 so we got a bowl of sliced fish and fried fish soup individually and mixed it ourselves instead. Fish was fresh and chunky! The fried fish didn't look like it would be so tender but what a pleasant surprise. Really enjoyed the soup too, opted for milk. No wonder there's always a long queue!
