Signature Chilli Pomelo Crab is simmered with lemongrass and ginger flower. The thick gravy has got just enough heat, and appears to be fiery on the first mouthful, but you will start to love it.

Generally not a fan of chilli crab. Having said that, it was done really well here. The crab was super fresh - the flesh was sweet and succulent, and I was willing to dirty my hands just to get at that last bit of crab meat. It was a pretty large crab with a lot of meat so it makes you feel that all the effort spent peeling was worth it, which is very important since crabs are such a hassle.
