One of the many deliriously delicious dishes I had the pleasure of tonight: the Oignon doux des Cevennes. In English, it probably means onion soup but calling this bowl of sublime, frothy, creamy, sweet, complex concoction in which hides a 62 degree egg that, is terribly insulting.
Amazed by the level of skill it took to execute that crisp scale-like layer of salmon skin. Also, blown away by the 62 degree egg. Can't wait for the mains!
