Bijin Nabe ($25/pax and come in pairs!) is your beauty collagen hotpot from @bijinnabe melting silky-smooth, cream-coloured pudding into bubbling golden Jidori chicken stock.

First, experience its purest taste in sake cups. The divine, nutritious essence is naturally creamily comforting. Flavourful and salty, it slides silkily down your throat, ending in a moment of satisfying bliss. The faint stickiness is testament to richness. Then, bite into tender fresh chicken parts hidden within the pudding that's now your nourishing broth.

Set aside all the liquid pureness you desire now, before cooking your platters of organic vegetables and seafood changes the taste of your stock. In goes tori tsukune (chicken meatball) scraped off a wooden spatula, then yellow zucchini, watermelon radish, baby corn, ladyโs finger, garnishing with yuzu. In drops your tray of leafy greens of sunflower sprouts, lettuce and baby sweet potato leaves with black fungus, enoki mushrooms and deep fried tofu. Four sticks of prawn, leave aside, for you to dip and boil when you so choose.

Your ground chicken meatball mixed with tapioca paste is one of the tastiest ingredients. The fatty meat juices is simply delish. While the taste of the soup dilutes, I relished how the soft greens picked up the thick broth and the refreshing zest of yuzu. From the basic spice set, yuzu pepper I enjoyed most!

As the hotpot simmers down to a concentrated gelatinous broth โ so salty yet enjoyable โ the waitress sets aside your hotpot's swimming remainders into a bowl. She empties in your complimentary refill of pudding, returning your broth to its original goodness.

Now for the finishing zosui (rice porridge) we chose. White rice, she empties into bubbling fresh broth, stirring for a minute or two. Wonderful. Satiety is what this is.

Tsukada Nojo specializes in Bijin Nabe which is otherwise known as Beauty Collagen Hot Pot. The collagen stock are made with their own Jidori chicken reared on their own poultry in Miyazaki prefecture in Kyushu, Japan. Please read my review at www.hungryghost.sg
Using organic chicken, this collagen-rich chicken stock is stewed for more than 8 hours until the chicken bones are dissolved. The result is a smooth collagen "pudding". Each Bijin Nabe comes with a variety of fresh, organic vegetables (free from pesticide), minced chicken & prawns.
Soup was flavourful with strong chicken taste but somehow I felt something was lacking. However, the ingredients were really fresh, especially the organic vegetables. I like the yuzu salt too! A good "dip"/flavour enhancer for the chicken.
Worth trying if you haven't. Try to go before the dinner crowd if you want to avoid the queue. Went around 5+ and was seated immediately.
Essentially the hotpot equivalent of your mother, grandmother or similar female maternal figure caressing your back and making you feel warm and fuzzy inside, and telling you everything is going to be just fine. Hands down my favourite hotpot experience in the country (and itโs a Singaporean exclusive โ Japanโs own Tsukada Nojo outlets offer no such hotpot). From the servers letting you have a sample cupful of the broth upon boiling and the subsequent placement of the individual ingredients into the hotpot for you, to them presenting to you a plate with a thank you message written in flavoured sauces, the experience is sure to leave you and your dining companions feeling pampered and satisfied.
