My choice for this sweltering morning was sapodilla and coconut. Only in Vietnam can I find ciku or sapodilla smoothies. So good and refreshing for a hot, hot morning.

This delicious noodle dish is famous in the Quảng Nam Province, hence its moniker. The thick cut noodles are quite unique, a balance of chewiness and softness. Topped roasted pork, river shrimp, fresh local veg, herbs, crushed nuts and a quail egg, and tossed in light pork broth sauce, it was yummy!

The recipe for these darling little dumplings, banh bao vac, is a secret held by one family which supplies them to the whole town. Lightly steamed, they are topped with deep fried shallots and eaten a dipping sauce made from shrimp broth, hot chilies, lemon and sugar. This is unique to Hoi An so please make sure you try them!

Crunchy, crispy and topped with a slightly spicy tomato salsa, groundnuts and spring onions, they were so good. Once you start, you just can't stop. Hoi An was a trading port in its heydays and hence, the traders brought their influence. This was left by the Chinese traders.
