This signature Ramen uses niboshi soup, served with tender braised pork belly, egg and seaweed. The soup is made from seafood with mackerel, bonito and pork bones so it's very flavourful, surprisingly light but if I had to nitpick, a tad oily. Very generous with the thin slices of roasted chashu.

If you ever find yourselves in the Nakano area, do yourself a favour and go for this "Japanese Soul Food" little Ramen eatery where they make their own noodles - and are very good at that. The noodles are silky and chewy but not jaw-breaking so.

Plus points: fun relaxing environment because they're super friendly and were blasting hip music in this tiny eatery!😂 The weather was so hot and the bowl of cold noodles (850¥, limited portions) were perfect!

Refreshingly light, cold broth and I loved that additional spicy tang when wasabi was mixed in.
