Here's a pic of the first mutton bun I've ever eaten. The usual strong smell of this meat (which is the reason I tend to avoid it), was masked by the heavy use of cumin. There was a mix of fat and lean cuts of mutton in here which prevented it from being dry.
In conclusion, it was pretty palatable, especially with a few blobs of their bean paste chili sauce. I'm glad I gave it a shot.
Freshly made yogurt garnished with sesame seeds and golden raisins, and various large breads such as these disc-like sesame seed ones are the norm at Xinjiang eateries and restaurants.
These skewers of grilled lamb, a classic of Xinjiang Chinese Muslim cuisine, tasted much better than I expected. Usually I avoid lamb but the throughly-seasoned chunks of meat were fragrant, moist and tender. Yummy enough to convince me to have a second helping.
The "Red Bean Paste Beef" looked interesting on the menu. However, it didn't taste the way I thought it would. Imagine having soggy red bean paste pancakes but with minced beef mixed into the red bean. I'm sure it's very popular with the locals but sorry, it just tasted odd to me.
The other dishes like the "Da Pan Ji" (a spicy curry dish with chicken, potatoes, peppers and hand-shaved noodles) and grilled lamb we had at "Xinjiang Islamic Restaurant" were pretty good though.
