There are no words to describe this glorious dish. It was perfect in every way. The intensified smokey umami of the bonito, the complexity of that burnt lemon sauce, and the pork fat rounds the dish off with smoothness and such depth. This time, it’s this Vietnamese iced coffee panna cotta with with cashew praline. THIS DESSERT IS OUT OF THIS WORLD. The ultra smooth panna cotta had the perfect jiggle, the fragrance and intensity of Vietnamese iced coffee and that unbelievably crunchy praline - this dessert has found its way to my heart. Part of the Friends of Butter Sandwich series, this Butter x Saga Enmore sandwich beautifully blurs the line of sweet and savory, soft and crisp - not your typical impression of a ‘sandwich’. That salted caramel ice cream is...just give me a whole tub of it.
A suggestion for the next time you make this @andybowdy - how about quitting Wonder White and layer the crispy chicken skin to resemble puff pastry (maybe thin layers of salted caramel in between to hold them together) to be the ‘bread’ and put that kickass ice cream in between. Now that’ll truly be a chicken skin gelato sandwich!
Unfortunately if you missed this today, the sandwich changes so something else by someone else tomorrow for the new week so look out for that!

Breakfast with the Sakumas - miso grilled king salmon, smoked eel croquette, 63 degree egg, furikake and mayo. The salmon was a tad overcooked for my liking and the dish needed more acidity overall. The V60 pourover (not pictured) was pretty awesome! #burpple #devoncafesurryhills
So I did.
Mushrooms on toast - roasted, pickled and caramelised mushrooms with mayo, sourdough (hidden by mushrooms) and fresh herbs. This has got to be the best rendition of mushrooms on toast I’ve ever had, from the huge variety of mushrooms (button, shiitake, shimeiji, enoki - that was what I could identify) to the sweet, sour, savory variants, to the toasted sourdough, mayo and freshness from the chives - it made for a wonderful hearty and umami packed breakfast. It was so delicious and filling, I almost could not finish it, and had (sadly!) no more space for dessert after. I now need to head back for the pastries and cakes! #burpple #sagaenmore #andybowdy
This dessert has been on the menu ever since I started dining at @artichoke_sg years back, and there’s a reason it’s still there. Not to be confused with a sticky date pudding, the combination of the sweet and the salty, the crunch and the wobbly, the liquid and the solids, the textural experience, combined with the contrasting yet complimentary flavors gives this dessert great depth.
