As part of the zero waste concept, the grouper bones are infused in soy sauce for 30 days which greatly amplifies the umami in the soy sauce. After that, half the bones are dehydrated to create ’soil’ (super savory crispy bits that dress the plate); the other half of the bones are used to make a stock to steam/bake the grouper. The latest layer of umami comes from the fermented prawn butter and that seals the deal.
I waited a couple of days to post this, as I could not get over how amazing this dish is. After finishing the fish, I kept going at the plate, scooping up as much sauce/crumbs as I could with my spoon as the depth of flavor in that umami laden sauce was too good to be wasted.
Definitely going back for the other main courses real soon.

Served with corn flakes, basil seed konnyaku, a slice of watermelon and some balsamic syrup from Modena, Italy. This ice cream has no lack of textures, but the interesting combination of that fresh, delicate strawberry flavor and the sweetness and tanginess of the balsamic syrup. I asked for it to be served in a separate dish as I didn’t know what to expect - but as I tried both elements together, it’s pretty brilliant.
However, if you are thinking of ordering these for kids, you might want to have the sauce separated too.

This makes for an iced coffee with a mega dose of caffeine - a delightful drink on a hot day. There’s also a decent scrambled eggs with cheese toast and some roasted tomatoes on the vine for $5. One of the rare places where you’re always pleasantly surprised at the reinterpretation of simple ingredients, cohesive concepts and of course, great cooking at its core.
I will dearly miss, the smoked tomato granita on the plump, sweet oysters (cold, sweet, smokey umami); the cheese buns with that aged Comte foam (always wipe the remaining foam off the dish with your fingers), the chicken liver cigars and date jam; that laksa leaf ice cream; ‘Popcorn’; the wagyu tartare with smoked maple butter and deep fried brussel sprouts; artichoke, truffle (I think) and burnt onion consommé (I think); the hapuka and the greatest of them all, the quail.
I cannot wait to visit the new bistro (at the current premises) and new fine dining restaurant (on Amoy Street). Thank you @rishinaleendra and @wamanuela for your wonderful food and hospitality. Michelin star or not, your food always has a place in my stomach and my heart. Goodbye for now, and hello again real soon!

A Horlicks cream encases a caramel and honey center, with a honey cornflakes base (think CNY goodie!). See layers in the second picture (please excuse the poor slicing of the dessert!) This dessert is light and refreshing, not too sweet, with the malty Horlicks, the rich caramel and the fragrance of honey. Definitely a head turner. If you have been wasting calories all your life eating pineapple tarts, it’s time to take a serious look at this Pineapple Butter cupcake from @pvbakery (for a limited time only!). When you take a bite of the cupcake, icing and caramelised pineapple ball on the top, you get that buttery, moist sponge with bits of caramelised pineapple, a little spiced icing and just a little more of that sticky pineapple goodness - tastes exactly like a pineapple tart with a completely different texture. I guarantee the experience is at least ten times better than eating a pineapple tart. But please, don’t take my word for it, go and experience this for yourself before the flavor run ends. Not too bad, I must say. If you had the corn soft serve cone a while back, this is quite unlike it. The dark caramel gives it a bit more depth, while the popcorn flavor is lurking in the background, a little shy to show its full presence. Let’s just say this is nothing like that buttery, dark caramel popcorn from @garrettpopcorn_singapore, but it’s definitely better than cinema popcorn. Will I eat it again? Why not? Of course I added clams and pork sausages so I might have killed the gentle umami from the kombu and the sweetness from the crab meat. Nevertheless, it’s always a great comforting bowl of pasta from them. Nothing mindblowing, but very satisfying. #habitatbyhonestbee #burpple
You slather it’s buns with bone marrow and beef the patty up with more bone marrow.
Would you enjoy this? ABSOLUTELY. Would you eat another burger elsewhere? That’s quite hard to say. Especially on Friday and Saturdays when @nekkid.sg opens till 2am making it the perfect supper spot.

I have been following @nglitying’s account for eons and finally made an order for these indulgent cookies. I chose these as the combination of bitterness of the matcha, and salt would balance out the sweetness of Speculoos filling. Besides looking super attractive, the alluring taste of this chewy soft cookie makes you not want to put stop putting them in your mouth. It’s been 3 days since I’ve collected them and I’m halfway through this batch. Don’t make the one mistake I did - procrastinate. Or maybe you should, so the next batch I order will come faster.
