Very brilliant creation! Chef approves! Let me tell you why I would love this more than raclette over fries! Firstly the choice of cheese is very wise, mozzarella. Mozzarella is a very very mild cheese which is good with oily fried stuff which you don't get sick of it after mouthful of it. We literally kept eating this non stop. They gave a side of tomato sauce to accompany this. A hint of sweetness and a hint of acidic of the tomato sauce works like magic for this. They are soooo generous with the cheese that the cheese is literally more than the fries. I can guarantee that you'll be so intrigued when you pull the fries out. The mozzarella is so stretchy!!!! A friend of mine brought me to @thereplacementlandk which is walking distance from JB custom. This cafe's interior is very sleek and very Melbourne inspired. Very good for photo-taking too! Soft shell crab Bao is something you must eat here in The Replacement! It's really nice and the sauce to dip your fries is TOBIKO AIOLI! Mini explosions going on in the mouth. Very interesting. This cost RM29.90 which is like SGD10.

This is dope!!! The smokey flavour in the lobster just bring this dish to a whole new level! Perfectly done!!
For those who are lazy to dissect the lobster, this is a great option! I love the ultra soft fluffy brioche roll which is lightly toasted. The dressing which the lobster meats are tossed with, lightly coats the meat which you still can taste the freshness of the seafood. The garlic aioli is dope! Garlicky and not too thick. Just perfect.
Chicken rice that is reasonably priced! And what's best? Comes with free two different kinda soups and homemade achar! This is one of our favourite from the katong khakis!
