When I visit high-end sushi restaurants, I prefer to surrender myself to the chef and let him decide what to feed me. This does mean however, I need to have faith in him to know what’s best in season (like this absolute stunner of an akagai /ark shell for example) and more importantly, to have a network of the right suppliers for them.
Chef Tomoo fits the bill perfectly and that is why whenever I am in the mood to spoil myself with sushi, his restaurant is the first and only place that comes to mind. I have Burpple Tastemaker @blueskiescottonclouds to thank for this because she’s the one responsible for introducing me to Sushi Kimura. Dining here with her and Burppler @happygreedyfoodie is always an extremely happy and satisfying event.
Please don’t ask me how “Nduja” is pronounced because different sources say different things. What is more important is that we all know it is a mighty tasty spreadable form of spicy pork salami. And at @lebonfunk, they make their own version which is served spread on housemade toast. I didn’t see it coming at all so when that element of sweetness from drizzled honey hit me, it was a most delicious surprise.
