The soup was very good. Savoury umami with a pork fat flavour.
Skin was reasonably thick and has a good bite. Overall a little bit too much skin but still within acceptable limits
This is a good version
This was rlly meh. Not only was it abit dry, but the flavour was lacking also. The pastry itself was abit sweet but that was it, not fragrant at all
quite good, the wet style, the sauce is on the sweeter side
As far as smelly tofus go, this one is pretty mild. The funk and the umami of the chili and dried shrimp goes pretty well tgt for a nice dish to have alongside rice
Green chillies carry some heat
Eggplants had a good texture. Soft enough but holds its shape. Simple, rather mild sweet sauce. It's coated w oil but somehow the dish isn't overly oily, there's hardly too much oil pooling at the bottom
Nonetheless, because of the oil it holds it's heat abit too well, being quite hot only until the end of the meal
Honestly the soup doesn't taste like anything. Tried it for the lolz, this dish is purely a display of knife technique
